"So much of my first year at Lazy Lady was pure magic. Even though it was really hard and often rather ego destroying, being witness to the alchemy of milk's transformation into these little jewels, and the extreme privilege of being allowed to be part of that, was really satisfying."
Building a Business with Heart
Lauren's journey didn't stop at mastering the art of cheese making. She took the bold step of starting her own business, Villa Villekulla Farm. Crafting cheese that resonates with people and honors her animals is a profound achievement for her.
"Starting and growing my little business, crafting something distinct that people had an overwhelmingly positive reaction to, and that I feel truly honors my beloved animals, is just a mindblowing honor."
A Cheese that Reflects Her Spirit
When asked what cheese best represents her, Lauren mentions her skyr. This Icelandic dairy product, known for its finicky and unusual nature, mirrors Lauren's unique personality.
"Obviously that would be my skyr. It's finicky, difficult, unusual, hard to categorize. But those who love it love it deeply. And the rest don't get it and it's not for them."
Aspirations: From Skyr to Farmstead Butter
Lauren's ultimate goal extends beyond cheese making to producing farmstead butter. The skyr she makes plays a crucial role in this ambition by utilizing what would otherwise be waste. She is dedicated to building her herd and mastering the techniques needed to introduce farmstead goat butter to the market.
"From the start, I've been working toward the ultimate goal of making farmstead butter, and the skyr was initially conceived as a way to support that ambition... My hope is to be able to offer that as well as a skim milk iteration of the skyr."
